Avocado toasts with seed butter

                      

Avocados are a rich source of pantothenic acid, a B vitamin that helps the body to convert food to energy. It is also high in beneficial monounsaturated fat and fibre plus vitamins B6, C, E and K and minerals including potassium.  Drizzling balsamic vinegar over the avocado supports healthy digestion. 

Serves 1 

 

 

Ingredients

 

  • 2-3 Gluten free crackers (we like Easy Bean Chickpea Crispbreads)

  • 1 tablespoon of super seed spread (or nut butter if preferred)

  • 25g salad leaves

  • 1 avocado, sliced

  • Drizzle of balsamic vinegar 

 

 

Method

  1. Spread the crackers with the seed paste.

  2.  Top with salad leaves, avocado slices and drizzle with balsamic vinegar. 

  3. Enjoy!
