Full of beans salad


Cooked, cooled potatoes and beans are high in resistant starch, which helps to feed the friendly bacteria in your gut as well as providing a great source of fibre in the diet. This version is simple to spoon up at the office or make it at home using leftovers and take it to work.  You can make your own bean salad by combining a drained tin of mixed beans with oil, vinegar and some chopped red pepper if you have more time. 


Serves 1




  • Handful of mixed leaves

  • 2 tablespoons of houmous

  • 2 tablespoons of ready – prepared bean salad 

  • 2 tablespoons of olives

  • 50g of cold, cooked potatoes

  • Avocado oil to drizzle





  1. Place the mixed leaves into a bowl and top with houmous, bean salad and olives. 

  2. Arrange the cold potatoes around the edge, drizzle over the oil and vinegar to taste.
