Overnight oats in a jar 

 

Make this creamy, crunchy ‘breakfast in a jar’ the night before and store in the fridge, ready to just grab and go in the morning! Use ground flaxseeds to add Omega-3 essential fatty acids to your diet (our bodies can’t make these so we have to get them through diet), in addition to fibre and antioxidants.  Flaxseed also has oestrogenic qualities, so can support hormone health. Drink a glass of water along with the flaxseed to support healthy digestion.  

Serves 1

 

Ingredients

 

  • 50g gluten-free oatmeal

  • 100g natural yogurt eg. Greek-style, organic, sugar-free

  • Mixture of red fruit – we used 1 tablespoon each of raspberries, blueberries and strawberries 

  • 2 tablespoons of ground flaxseed

  • Nuts to decorate

 

 

Method

 

  1. Mix the oatmeal and half of the yogurt together and place in the bottom of a clean, sterilised jam jar (you can do this by pouring boiling water into the jar, rinsing then drying well with kitchen towel before using). 

  2. Pile the fruit into a layer on top of the oat mixture. 

  3. Pour the remainder of the yogurt on top of the fruit and sprinkle with nuts and flaxseed. 

  4.  Secure the lid on tightly and chill overnight.
