Pick and mix breakfast bowl
Smooth and crunchy at the same time and packed with protein, soluble fibre and vitamin C, this makes a colourful, satisfying start to the day. The nutty hemp mixture contains almonds, walnuts, hemp seeds and cocoa nibs and is rich in vitamin E (an antioxidant vitamin that helps to support a healthy immune system). You can find it ready mixed in supermarkets or health food shops or grind your own in a blender using any combination of nuts and seeds – it can be stored in an airtight container in the fridge for up to 2 weeks. Choose yogurt that contains live bacteria – organic, unsweetened, Greek-style is best.

Ingredients

25g flaxseed

125g natural yogurt

Selection of toppings: One tablespoon each of strawberries, blueberries, almonds, oatmeal, nutty hemp and cocoa nib mix.
Method

Sprinkle flaxseed into the bowl and cover with yogurt.

Add each topping working around the bowl until the yogurt is almost covered.

*Try raspberries and blackberries combined with walnuts or cashews to ring the changes.
*Use gluten-free oats and dairy-free yogurt alternatives (eg. from coconut milk) if you are following an elimination diet.
*Layer up toppings in a clean, sterilised jam jar to make a portable version to take to work.
